Something I really miss are Ubuntu's beautiful fonts. How do I install them for Trisquel? Also I'd like to know how to make them the defaults.

Which fonts, specifically, are you looking for?

As far as I know, by default Ubuntu uses a font called "Ubuntu Font
Family". This font can be installed from the "ttf-ubuntu-font-family"
package.

Then you can set your applications to use it from System > Preferences >
Appearance > Fonts.
